I haven't posted a recipe in a long time. We tried this earlier in the week, and it was super easy to make.
Here is the original recipe from Everyday Food magazine (March 05, p.80):
3 med baking potatoes (1" pieces)
3 med zucchini (1" pieces)
2 med onions (halved, sliced 1/2")
8 garlic cloves (peeled, smashed)
2T + 1t olive oil
4 sprigs fresh rosemary
salt and pepper
2 lb boneless center-cut pork loin (tied if desired)
Preheat oven 450F
On large rimmed baking sheet, toss veggies + garlic w/ 2T oil, rosemary, 2t salt, 1/4t pepper
Rub pork w/ oil, season
Place pork on top of veggies
Roast, toss occasionally until thermometer registers 150F (about 35-40 mins)
Rest 5 mins, slice thinly
What I would change next time:
*Add a little more veggies and garlic
*Not a big fan of rosemary, so I'd skip it next time, or just dried rosemary
*Add mushroom or summer squash for more color
*Roast at lower temp (400F?) for longer time 10-15 mins
